Agar-Agar
Making desserts with agar-agar is quick and easy. Add 1-tablespoon
agar-agar flakes or ? teaspoon agar-agar powder to a cup of juice, soy
milk, or stock. Bring to a boil; simmer 10 minutes for agar-agar
flakes, 5 minutes for agar-agar powder, or until dissolved. Add spices,
fruit, or vegetables, chill and serve.
Agar-agar is a member of the red algae seaweed family harvested off
the coast of Japan. Agar-agar is processed and dried into white flakes
and powder. Colorless, odorless and with no calories, agar-agar is high
in calcium, iodine, trace minerals, and fiber. Apple Kanten

Serves 4
1 quart apple juice
4 tablespoons agar-agar flakes or 2 teaspoons agar-agar powder
Optional serving suggestion: garnish with slivered almonds, toasted coconut, strawberries or sliced kiwi.

1. Pour juice into a medium stockpot.
2. Add and stir in agar-agar.
3. Bring to a boil and simmer 5 minutes for powder or 10 minutes for flakes, or till juice is clear and smooth.
4. Pour into 4 individual dessert bowls or a quart-size glass or ceramic bowl.
5. Let it cool on the counter for 4 hours or refrigerate for 2 hours before serving.
Variations
Add fresh sliced strawberries, peaches, pineapple, pears, cherries,
or blueberries. Place fruit in dessert bowl and pour hot kanten on top.
Chill and serve.
To make different flavors of kanten, simply change the flavor of juice. For instance, use cherry juice for a cherry kanten.
For a creamy custard variation, transfer chilled and jelled kanten
to the blender or food processor. Blend with 1-2 tablespoons of tahini
or almond butter and 1 teaspoon of vanilla.
For a crunchier dessert, add a few nuts or seeds.
