Banana Cake

  4 cups whole wheat pastry flour
2 tablespoons baking powder
1/2 teaspoon sea salt
3/4 cups walnuts
1-1/2 cup raisins or 1/2 cup raisins with 3/4 cups dried fruits, such as pitted dates or chopped dried pears
1/2 cup canola or corn oil
1 cup maple syrup
1 tablespoon vanilla
2 cups apple juice
2 ripe bananas
1/2 cup vanilla soy milk or rice milk
Preheat oven to 350 degrees. Put flour, sea salt, baking powder, nuts and dried fruits in a large mixing bowl. Blend bananas in a food processor with the other wet ingredients (soy milk, oil, maple syrup, juice, and vanilla. (You may need to do this in shifts, unless you have an extra large food processor or blender.) Add and stir liquid ingredients to dry ingredients. Taste the batter, if you like. Lightly oil a 9x13x2 inch baking dish. Pour in the batter. Bake for 45 minutes.

Improvisation:   Use only 3/4 cup apple juice and add an extra banana. Bake for 30-40 minutes.
