Creative Vegetarian Cooking with Sea Vegetables

Gluten-Free and Vegan Sweet Potato Fries

This colorful, delicious, quick to make sweet potato fries dish is loaded with vitamins and minerals. Kelp is a tasty sea vegetable that is rich in Vitamin C, calcium, iron, manganese, and magnesium. I garnished and seasoned the dish with kelp powder and hemp seeds. Looking like sesame seeds, hemp seeds have a softer texture and milder flavor. Rich in omega -3, omega-6, omega-9 fatty acids, fiber, minerals and vitamins, hemp seeds are also a complete protein. Sweet potatoes are loaded with beta – carotene, which we convert to Vitamin A.
