Happy Passover and Happy Spring Everyone! Once you see how quick and easy it is to make your own grated horseradish and charoset, the nut and dried fruit dish that is part of the seder plate, I hope you will make your own.
Vinegar to taste, start with a teaspoon for an horseradish 6-8″ root
Rinse. Grate the horseradish by hand or food processor
Add a little vinegar to calm the heat. Taste and adjust the seasonings, adding more vinegar to cool it down.
½ cup almonds
½ cup dates or dried apricots
1 grated and peeled whole apple, about 1 cup
Pinch of cinnamon
2 Tbsp wine, optional
Put all the ingredients in a food processor; puree; taste and adjust the seasoning
