Today, I made Organic Cacao Cashew Truffles, easy to make, high energy, nutritious snack, gluten-free and vegan. I have made them before, but this time swapped out the cacao butter and used virgin coconut oil and cashew butter for a rich, delicious pick me up treat. Maca added more super food goodness to the raw cacao. Then I rolled them in high anti-oxidant goji berries, Omega 3 packed hemp seeds, shredded coconut and for a nice crunch and more magnesium, cacao nibs. Sweetened with organic maple syrup, and organic vanilla extract.
