Makes 20-24 cookies
2 cups organic almond flour*
2 cups organic oat flour*
1/2 cup organic maple syrup
2 teaspoons organic cinnamon
2 teaspoons organic vanilla extract
1/2 teaspoon sea salt
* You can make your own organic almond and oat flours. Simply grind almonds into a meal and grind rolled oats into a flour in your food processor.
1 cup organic dried apricots
2/3 cup water
2 tablespoons organic honey or organic maple syrup
Preheat oven to 350 degrees. Oil a cookie sheet with melted coconut oil and set aside.
Put the dried apricots, water, chia seeds and honey in a high speed blender and let them soak while you mix up the cookie dough.
Combine oat flour, almond flour, melted coconut oil, maple syrup, cinnamon, vanilla and sea salt in a mixing bowl. Mix well. Shape into walnut sized balls and place on cookie sheet. Press thumb gently inside the center to make room for apricot filling.
To make the apricot filling. Puree the soaked apricots, water. chia seeds, and honey. Taste and add more honey, if desired.
Drop a dollop of the apricot filling, about 1 teaspoon, into the center of each cookie. Bake for about 10 minutes, or until golden brown. Allow to cool about 10 minutes before eating.
