Buckwheat Pancakes

Buckwheat pancakes, gluten-free, quick and easy to makeYUM! I love a dollop of coconut oil on top of my Buckwheat Pancakes. Love it so much that it melted into the shape of a heart. These gluten-free pancakes are super easy to make. Lucuma adds a naturally sweet maple flavor, and is packed with anti-oxidants, minerals and vitamins: carotenes and Vitamin B 3.

Did you know that buckwheat is one of the few grains that is also a complete protein?

Serves 1-2

1 egg

1/2 cup apple juice

1 Tablespoon maple syrup

1 teaspoon vanilla extract

1/2 cup buckwheat flour

*1 Tablespoon Lucuma

1 teaspoon baking powder

1/2 teaspoon Celtic Sea Salt®

Extra virgin coconut oil for frying

Whisk the egg in a medium sized bowl. Stir in juice, oil, maple syrup and vanilla. Add flour, baking powder, salt, and stir until well combined.

Heat the coconut heat over medium heat in a cast iron griddle or heavy skillet. Brush it over the surface when it melts. Ladle batter onto the hot pan.  Fry for about 2 minutes until the tops are bubbly and edges appear dry. Flip over pancakes and fry for about a minute until the bottoms are brown.

Serve immediately with your favorite topping.

* If you do not have Lucuma powder, you can just use all buckwheat flour or sub maca powder for the Lucuma.
