Hearty Buckwheat Pancakes

I love coconut oil on my Buckwheat Pancakes. Love it so much that it melted into the shape of a heart. These gluten-free pancakes are super easy to make. Lucuma adds a naturally sweet maple flavor, and is packed with anti-oxidants, minerals and vitamins: carotenes and Vitamin B 3. If you do not have it, go ahead and make these pancakes. Delicious and hearty for breakfast, feel free to double of triple the recipe, if you like.
½ Cup Organic Apple Juice
1 Tablesspoon Organic Maple Syrup
1 teaspoon organic Vanilla Extract
½ Cup Organic Buckwheat Flour
*1 Tablespoon Navitas Natural Lucuma or Maca Powder, Optional
1 teaspoon Baking Powder
½ teaspoon Sea Salt
Nutiva Organic Extra virgin Coconut Oil for frying
Whisk the egg in a medium sized bowl. Stir in juice, oil, maple syrup and vanilla. Add flour, baking powder, salt, and stir until well combined.
Heat the coconut heat over medium heat in a cast iron griddle or heavy skillet. Brush it over the surface when it melts. Ladle batter onto the hot pan. Fry for about 2 minutes until the tops are bubbly and edges appear dry. Flip over pancakes and fry for about a minute until the bottoms are brown.
