I love coconut oil on my Buckwheat Pancakes. Love it so much that it melted into the shape of a heart. These gluten-free pancakes are super easy to make. Lucuma adds a naturally sweet maple flavor, and is packed with anti-oxidants, minerals and vitamins: carotenes and Vitamin B 3. If you do not have it, go ahead and make these pancakes; simply substitute buckwheat flour for it. Delicious and hearty for breakfast, feel free to double of triple the recipe, if you like.
