Smiling at the memory of teaching my hands on farm to table cooking class at Esalen Institute and showing how to make these delicious, absolutely scrumptious Chocolate Chip Hazelnut Brownies, which happen to be gluten free. You can make these brownies with a variety of nut flours like hazelnut and almond flours. Teff flour, coconut flour and brown rice flour work well, too. And sometimes, I use fair trade organic cocoa and other times fair trade organic cacao powder. Always fair trade organic dark chocolate chips. Grass raised organic butter or virgin coconut oil and maple syrup adds richness and sweetness. Here at home, my edible calendula flowers are in bloom and grateful to Tracey Eller for taking this photo and styling it with as Kate Kilday of Woodland Essence taught me long ago that calendula flowers are like eating sunshine. Fun to eat chocolate chocolate chip waffles with my daughter Emily. I like the chocolatey flavor of teff flour. Adding either organic, fair trade, cocoa and cacao make delicious waffles. I also added super foods maca and lucuma to power us through our day. Organic maple syrup, chocolate chips and vanilla extract makes sweet waffles that we love eating with our hands like muffins. In honor of my 65th birthday and party, my daughters Emily and Michelle visited. We played, went swimming, cooked together and ate lots of yummy meals. They helped me celebrate and make the party feast. Here is Michelle, rolling spring rolls on my sunny deck. First, she picked fresh cilantro and mint from my organic herb garden next to the deck.
