Warm day, sunny day! Yippeeee! Grateful for all the organic farmers growing great greens this time of year. And of course there is plenty of wild dandelion greens and chives right out the door to add to the fun of fresh harvest. Organic Lawn to table meet organic farm to table.

Dressing it up with some organic, fair trade, avocados from my local coop. You can add some nuts, like organic pecans, like I did below or organic olives. Simple! Either way, will be delicious, nutrition and satisfying. For a quick dressing, I like to have on hand organic blood orange flavored virgin olive oil and my homemade infused Strawberry Vanilla Fig Balsamic made last summer with organic strawberries from my CSA (Community Supported Agriculture). YUM!
For my Spice it Up, Creative Cooking with Herbs and Spices hands on Vegetarian Cooking class, March 17, 2019, we created a twist on a classic minestrone. Using a little strip of tasty and mineral rich dulse sea vegetable, a pinch of organic saffron and organic bay leaves to simmer and flavor the lentils. Once the lentils began to soften, we added organic grated sweet potatoes, sliced onions and potatoes. When the vegetables were tender, we added organic diced tomatoes, water, sea salt and fresh chopped rosemary and dried herbs: oregano, basil, thyme, and fresh ground black peppercorns. Turned off the heat. Added a handful of organic quinoa macaroni to expand and cook from the residual heat. Eco- cooking tip! This Orange Poppy Seed Cake can be eaten for breakfast and is fabulous served as a dessert too. Use organic oranges to make your own fresh squeezed orange juice and grated orange zest for a naturally sweet and bold flavor. I like to use 3 different flours – teff, brown rice and coconut – to create a very satisfying gluten-free cake. By the way, don’t worry that the cake batter is unusually thick.
