Calendula flowers are edible. Light and filled with sunshine, they make everything pretty from brownies, pies, salads, sandwiches, appetizers, marinated dried tomatoes. I love turning folks on in cooking classes to using edible flowers as garnishes for vegetarian, vegan and gluten free meals. And they are easy to grow organic. I do a lot of coaching and teaching about eating your way to strong bones. Yet, it is summer and organic tomatoes and eggplant are in season. Here is how I create/cook up balance. When I blend the cooked eggplant, I add garlic, plenty of parsley, some raw, calcium rich and alkalzing tahini, and also season the dip with alkalizing umeboshi vinegar. Lemon and sea salt would also be fine. My daughter Michelle became the catalyst for some recent change. She is well onto building her own life and getting ready to live a dream abroad. She came home to visit before leaving.
