Chocolate Chocolate Chip Teff Gluten Free Delicious Waffles

Serves: Makes 2 large 4 square waffles; serves 2-4

Teff is a super food. Paired with cocoa and dark chocolate, these waffles are loaded with iron, calcium, and magnesium just to mention a few benefits. I like to add a little maca and lucuma to enhance my super powers. Don’t have them on hand? No worries. Substitute teff flour! Note: These are totally fun to eat with your hands.

Eating Chocolate Chip Waffles with Emily

Fun to eat chocolate chocolate chip waffles with my daughter Emily. I like the chocolatey flavor of teff flour. Adding either organic, fair trade, cocoa and cacao make delicious waffles. I also added super foods maca and lucuma to power us through our day. Organic maple syrup, chocolate chips and vanilla extract makes sweet waffles that we love eating with our hands like muffins. Fruit Smoothies, YUM!

In hot weather, I love making fruit smoothies for breakfast. Using chia seeds, hemp seeds and cashews for a vegan smoothie gives me great energy and stamina for hours. Great Vegan protein, too! Chia seeds and Hemp seeds are both a complete proteins and offer lots of Omega fatty acids, fiber and anti-oxidants 

Sometimes , I like to make my smoothies with grass raised organic yogurt. Goat, sheep and cow yogurts are my preference. And no need for straws; I love to drink smoothies straight from the glass. (My photographer thought it would look great for the photo and I recycled the rest.) Continue reading

Hearty Buckwheat Pancakes

Buckwheat pancakes, gluten-free, quick and easy to makeI love coconut oil on my Buckwheat Pancakes. Love it so much that it melted into the shape of a heart. These gluten-free pancakes are super easy to make. Lucuma adds a naturally sweet maple flavor, and is packed with anti-oxidants, minerals and vitamins: carotenes and Vitamin B 3. If you do not have it, go ahead and make these pancakes; simply substitute buckwheat flour for it. Delicious and hearty for breakfast, feel free to double of triple the recipe, if you like.
