Organic Ingredients Spring Rolls for Slow Living

Spring rolls make a beautiful appetizer with colorful seasonal vegetables and garden fresh herbs. As the seasons change you can substitute ingredients and create colorful mosaic patterns with numerous combinations of salad greens, grated, marinated, pickled, seasonal vegetables, edible flowers, herbs and more. Plus, with climate change, this “yoga in the kitchen” flexible approach to mixing and matching local ingredients may be the key to lessening our carbon footprint and eating well throughout the year. Michelle Rolls Spring Rolls

Michelle Rolling Spring Rolls for my birthdayIn honor of my 65th birthday and party, my daughters Emily and Michelle visited. We played, went swimming, cooked together and ate lots of yummy meals. They helped me celebrate and make the party feast. Here is Michelle, rolling spring rolls on my sunny deck. First, she picked fresh cilantro and mint from my organic herb garden next to the deck. Grated carrots.  With organic, tasty, quick cooking, gluten-free rice ramen, she rolled 20 beautiful, vegan, spring rolls.  Emily made a yummy organic coconut cacao mousse. Proud and grateful mama! Spice Up Your Whole Grains

Organic, gluten-free, Vegetarian Sorghum Salad

Versatile and neutral flavored whole grains pair well with most herbs and spices. Above is my Mediterranean Sorghum Salad, a popular warm weather salad. With a satisfying chew similar to barley, gluten-free sorghum can be stir fried with African spices, or boldly dressed with a ginger miso dressing.
