Teff is a super food. Paired with cocoa and dark chocolate, these waffles are loaded with iron, calcium, and magnesium just to mention a few benefits. I like to add a little maca and lucuma to enhance my super powers. Don’t have them on hand? No worries. Substitute teff flour! Note: These are totally fun to eat with your hands.
This Orange Poppy Seed Cake can be eaten for breakfast and is fabulous served as a dessert too. Use organic oranges to make your own fresh squeezed orange juice and grated orange zest for a naturally sweet and bold flavor. I like to use 3 different flours – teff, brown rice and coconut – to create a very satisfying gluten-free cake. By the way, don’t worry that the cake batter is unusually thick. Fun to eat chocolate chocolate chip waffles with my daughter Emily. I like the chocolatey flavor of teff flour. Adding either organic, fair trade, cocoa and cacao make delicious waffles.
