1 pound extra firm tofu
3 cloves garlic, sliced
2 inches of ginger, peeled and grated
2 tablespoons tamari
1 tablespoon mirin
Press tofu between 2 cutting boards for 10-15 minutes to remove
excess water.
Cut tofu into 1/4 inch by 1 inch cube pieces. Put tofu in a mixing bowl
with all the other ingredients. Mix them together. Marinate at least
for 15 minutes. Serve as a side dish or as part of a salad.
