Beside latkes, you can make delicious fried amaranth corn croquettes, pictured above.
Egg Rolls are also a hit, and my recipe includes those anti-oxidant rich goji berries. Fried in Virgin Coconut oil. YUM!
Falafel, another fried favorite is delicious fried in ghee.
Latkes, of course, I will be making some of these, too. Mine feature gluten free, naturally sweet flavored teff flour instead of wheat.
