Amaranth Corn Croquettes, scrumptious, gluten-free, vegetarian, Eat to Thrive Recipe

Besides latkes, you can make other delicious, festive, vegetarian dishes for Hanukkak.

Fried amaranth corn croquettes, pictured above is another vegetarian great choice for Hanukkak.

Egg Rolls are also a Hanukkak hit, and my vegetarian recipe includes those anti-oxidant rich goji berries. Fried in Virgin Coconut oil. YUM!

Falafel, another fried vegetarian favorite is delicious fried in ghee for Hanukkak.

Latkes, of course, I will be making these for Hanukkak, too. Mine feature gluten free, naturally sweet flavored teff flour instead of wheat.

For those of you new to teff, the subtle chocolate, hazelnut flavor, calcium and iron rich powerhouse of flavor and nutrition makes this Hanukah healthy, fun and delicious.
