Coconut Curry Lentil Soup with Coconut Milk

Coconut Curry Vegetable soup is a favorite recipe of mine to teach in hands on cooking classes as well as cook for myself and personal chef clients.

I enjoy the playful mix and match of organic vegetables and spices. As the seasons change so do the veggies and spices that I use to make delicious variations. Sometimes, I fry the spices in ghee (vegetarian); other times in virgin coconut oil (vegan) and sometimes, just add spices without frying.
