I spent 3 hours digging Jerusalem Artichokes out with my hands. I did wear gloves. Ahhhhh the sweet earth smell and delicious Jerusalem Artichokes! Gathering, gathering and storing up for winter. Found a few leeks, too.
Sun chokes are a perennial. Once you plant a couple, they will multiply every year to feed the world. You can eat them fresh, they have a sweet crunch and you can cook them like a potato. Add them to soups, salads, stews, stir fries, and roasted vegetable vegan, vegetarian and gluten-free dishes. Delish!
