All organic, summer fresh farm to table vegetarian and gluten free dinner is easy to prepare.

Here’s how I prepared this summer fresh dinner using the local, seasonal harvest.

The corn on the cob, you might like it quickly steamed, though I have to admit, I have been eating loads of fresh corn, raw after shucking it. 

Topping the corn was my vegan walnut and hemp seed pesto made with plenty of fresh picked basil and home grown garlic. To make this quick meal, I used some of the leftover pesto, I made yesterday. Froze some for winter and kept some for immediate satisfaction.

The tempeh was sautéed in virgin olive oil with onions with fresh ground sea salt and black pepper. After about 5 minutes, I added the chopped green beans, kale, and red bell peppers, seasonal delights. Ever notice that fresh picked veggies taste better than they do shipped in from afar when out of season here. Just not the same, though they look like the same vegetables.

Anyway, once the green beans turned bright green and the red peppers got brighter. I turned off the heat and tasted the seasonings. YUM!

Plated the meal and topped the veggie sauté with some local, organic, goat ricotta, which melted some from the heat of the vegetables.

Eat the rainbow. Colorful summer fresh vegetables and vegetarian proteins: goat ricotta, tempeh, hemp seeds, walnuts, and did you know that veggies have some protein, too? 

Thanks to the local farmers, and all the hands of love that grew my food.
