I love my job. I have the privilege of developing recipes with Deans Beans organic and fair trade cocoa and coffee.
Here I am with Dean Cycon, founder of Deans Beans.
Dean and I both live in Western MA, and also grew up in Queens, NYC, NY. Great coincidence that we enjoyed the same fairyland, kiddy amusement park, growing up.
Though, we did not know each other as kids, we sometimes meet at local farmers markets, and have many friends in common.
Above, in the photo, Dean and I are standing in front of my brick oven in my gourmet country kitchen in Western Massachusetts.

The cookies are vegan. I used organic extra virgin coconut oil. And you are welcome to swap organic avocado oil, if you like.
Organic grass raised butter is also a great choice for a vegetarian cookie.
And I created this gluten free recipe with teff flour which has a subtle chocolate flavor as well as abundant source of calcium and iron.
Teff, an ancient grain has origins in Ethiopia like the coffee I chose to make these Espresso cookies.
Best of all Delicious, all about the Yum! Easy to prepare, too!
The cookie got raves from Dean and the camera crew.
