Chocolate Chocolate Chip Waffles with Teff

You can make quick and easy, delicious, gluten free waffles everyday.

Since writing my cookbook, Gluten Free Recipes for the Conscious Cook (published) in 2010, I have cooked up an endless variety of gluten free waffles using 1, 2, and even 3 different gluten free whole grain flours.

Lately, I like to skip the toppings and put the maple syrup in the batter along with organic berries and dark (fair trade, organic) chocolate chips.

Adding super foods like maca and lucuma enhance the nutrition. Plus, gluten free flours such as teff, buckwheat, millet and corn are loaded with vitamins, minerals, and flavor.

Don’t get me wrong, topping waffles with fresh, homemade, warm, organic, strawberry sauce and yogurt is also a treat for a leisurely brunch.
