In fact, I just taught this recipe swapping veggies. A common practice these days for many home cooks. Did you know that you can swap kale and chard for broccoli?
For many participants in my hands on vegetarian and gluten free cooking class on zoom and at the famed resort and spa, Rancho La Puerta, it was their first experience baking with teff flour. Everyone loved it.
