My cilantro is flowering and some is becoming cilantro seed also known as coriander. Today I made vegan cilantro pesto with cilantro flowers, some fresh cilantro and fresh green coriander seed. I highly recommend it. The fresh coriander seed has a light and sweeter flavor than cilantro.
You can make a delicious organic, vegan, raw, gluten-free, easy to make cilantro pesto, made with almonds and sunflower seeds, and is from my cookbook, Gluten-Free Recipes for the Conscious Cook
And Cilantro Hemp Seed Pesto is one that I developed for Nutiva with their organic nutritious and delicious hemp seeds and hemp oil. Hemp is a great source of Omega 3 fatty acids, antioxidants, anti-inflammatory, delicious and is also a complete protein.
Enjoy and feel free to use the pesto as a spread, dip or on pasta for a great side dish or main course. Have a great organic feast!
