Fruit Crisp with Teff Flour

Take your pick of seasonal organic fruits: blueberries, peaches, apples, cranberries, and mix and match with a some dried organic fruits  like dates or mangoes, for extra sweetness and variety.

Enjoy a fruit crisp topped with yogurt for a nourishing start of your day, or whipped cream or ice cream for a delicious dessert.

Teff Flour makes a great fruit crisp topping. Sweetened with maple syrup and vanilla, a little cinnamon. YUM! 

You can find my original vegan, gluten-free recipe for Apple or Pear Crisp that I developed for the Teff Company back in 1990 in my first cookbook, The Quick and Easy Organic Gourmet.

These days, I prefer using organic extra virgin coconut oil, organic pecan oil, or grass raised organic butter in all my pastry making. I no longer use corn or canola oil, not even GMO-Free canola and corn oil.

And teff is loaded with calcium, iron and potassium.

Also, teff flour is gluten-free with a slightly chocolate flavor. Delicious!
