Healthy Beautiful Edible Nasturtium Flowers are fun to eat.

The other day, feeling a little rushed for time, I went into my garden and harvested about a dozen nasturtium flowers to put on my sandwich. Ordinarily, I would have also added arugula, tat soi and lettuce.

Turns out that nasturtiums are healthy, loaded with Vitamin C, and help support our immune system. And the nasturtium leaves are even more nutritious: rich in antioxidants, vitamins, and bio compounds that support healthy digestion, immunity, and respiration.

In this video, I am in my organic garden harvesting and eating nasturtiums talking about how they make great garnishes and snacks.

And nasturtiums are great as a companion plant in organic gardens helping other vegetables grow.

Below is a photo by Tracey Eller, when I was teaching organic farm to table, hands on vegetarian cooking at Esalen Institute, Big Sur, CA.  Photo was taken before one of my class sessions of Improvisational Cooking for Health and Vitality.

To add beauty, we garnished many of the dishes we prepared for our lunch with healthy, edible, colorful, nasturtium flowers. Their slightly peppery flavor add pizzazz.
