I crave organic chestnut flour waffles. A gluten free waffle, you can make with astonishing ease, as I often do. And I would love to teach you this recipe and more.
On Saturday, February 8, 11AM-2PM EST, I am excited to be teaching in person and on Zoom; Hands on Cooking Brunch Class, Celebrating the Trees and Tu B’ Shevat.
Ever since I tasted Jesse’s local, organic, hickory nut oil on a crust of bread, 2 years ago at Big River Chestnuts Farm in Sunderland, MA, I craved more.
Then Jesse, Eric and I met again. This time we were part of a private chestnut (flour) pastry tasting event.
And when I reached out to Jesse this fall, we were both ready for me to visit, and get some organic chestnut flour and hickory nut tree oil.
Driving up to their organic tree farm in Northfield, MA from my home in Western MA, was only a 30 minute drive.
There, I was welcomed in by Eric, Jesse’s partner in growing organic chestnut and hickory nut trees.
Sitting at their kitchen counter, we enjoyed talking about organic farming, permaculture, sustainable lifestyle, and the art of self care.
We were excited for me to cook, bake and create recipes to teach you with chestnut flour and hickory nut oil.
As is my nature with creating recipes, I get an idea and then ruminate on it for awhile before cooking or baking it.
Much to my delight, the first time, I used the organic chestnut flour and hickory nut oil, I made a delicious, quick and easy, gluten free waffle that was lighter in texture from other gluten free waffles.
And, I have made, served, taught and eaten dozens of tasty gluten free waffles using one or a combination of gluten free flours: buckwheat, teff, corn meal, quinoa, and almond.
As a participant in A Hands on Brunch Cooking Class in person & on Zoom, Saturday, February 8, 11AM-2PM EST I am excited to teach you how to make these waffles, organic almond milk from scratch, hot cacao, and more.
Participants will eat what we cook for our brunch.
Plus, nourish you with tasty snacks I have prepared special for you to nibble on while we cook:
- Organic Cilantro Almond Dip, dipping veggies and crackers
- Organic nuts (pistachios, walnuts, almonds)
- Organic fresh and dried fruits (dates, figs, citrus)
- Organic olives
- Fair trade organic coffee
- Leslie’s Infamous organic non caffeinated Chai with tree grown cinnamon
- Well water with sliced organic lemons
Let’s gather, cook, feast and celebrate the trees.
Thanks to a generous grant from the Harold Grinspoon Grant I am able to offer this unique Hands on Brunch cooking class at a reduced rate.
By the way, the waffles and drinks will be unsweetened.
Organic local maple syrup and maple sugar will be available for YOU to top YOUR own waffles and sweeten YOUR drinks to YOUR taste. And you might choose to eat the waffles without syrup since the chestnut flour is naturally sweet.
