Good Morning Pancakes

I love breakfast! Whether it’s warm from the oven, hot off the stove, or straight from the blender, I find it hard to start the day without the pleasure of a good meal.Depending on my mood (and what’s on hand in the pantry), breakfast choices can be hot, cold, savory or sweet. Some days, a hearty dish of pasture raised organic eggs with fried dulse or nori (mineral rich sea vegetables), a goat cheese omelet, or a tofu scramble is perfect for satisfying the lumberjack in me. On hot days, for a quick no-fuss breakfast, refreshing organic fruit smoothies are a natural choice. When the weather turns brisk, nothing warms me like a bowl of hot porridge. On some winter mornings, I bake up some fresh granola, sweet scones, or quick corn muffins. I must confess—I have always loved sweet treats for breakfast. If there is leftover gluten-free peach crumb pie or apple crisp from the day before, there’s a good chance that I will enjoy it in the morning along with a cup of piping hot green or yerba mate tea. And when time is not an issue, I make a stack of delicious waffles and pancakes, especially those made with teff flour. I do not know what it is about teff pancakes, but I never grow tired of them. Sometimes I add mesquite and maca flour to add more vitamins, minerals and flavor.
