The Organic Gourmet, Leslie Cerier from LeslieCerier.com showed us how you can incorporate more fiber into your daily life and shared a delicious recipe for a high fiber hot breakfast cereal.

Warming Sweet Porridge

 

Oat and Amaranth Hot Cereal with Dried Mulberries

High fiber dried mulberries rolled oats, and amaranth taste great with a touch of cinnamon and coconut. This naturally sweet porridge is a great way to start your day.

Serves 2-3

2/3 cup rolled oats

¼ cup amaranth

¼ cup shredded coconut

¼ cup dried mulberries

1 teaspoon cinnamon

4 cups water

Pinch sea salt

Optional: Garnish with almonds, blueberries, goji berries, chia seeds, ground flax seeds

1. Place all the ingredients in a 1-quart saucepan, adding the water last. Cover and bring to a boil over medium heat. Reduce the heat to low and simmer 10 minutes, or until the amaranth is tender and the mixture begins to thicken.

2. Turn off the heat and let sit for 5 minutes to absorb the remaining liquid.

3. Serve hot, either as is or topped with your favorite milk, yogurt, or maple syrup. Garnish with almonds, blueberries goji berries for an artistic touch and more fiber.
