The moment is bliss.

Blending up a Lemony Parsley Dressing when the Organic Meyer lemons are in season.

Sure you can make this creamy, vegan dressing with organic lemons, too.

Organic extra virgin olive oil is an excellent choice to make this dressing. Other healthy and tasty oils to use are sesame, hemp, walnut, avocado, or hazelnut oil,  just to name a few.

Slice up a couple of cloves of garlic cloves.

Also, if in season, garlic scapes or garlic chives would be excellent, too.

Blend it up with sea salt and fresh ground pepper for balance. 

And for the salad, you can use a Mesclun mix. Feel free to create your own green salad with a combo of lettuce, spinach, arugula, baby mustard greens, and baby kale.

For color, add some shredded red cabbage, beets, and carrots. Sliced radishes and colorful thin strips of bell peppers make the salad come alive. 

Like I always say when I am teaching, choose 5-7 ingredients. That way, you can taste each one.
