Fresh herbs like oregano, marjoram, mint, cilantro, thai basil; pick one or a few to add aromatic flavors. Then a quick dressing of flavored oils and vinegars makes a quick and easy dressing.
And eating from a wooden bowl made by a local craftsperson also adds to the fun and beauty of the dish.
