Whenever, I make vegan sushi, I mix and match the local, seasonal, organic produce with ginger tempeh, tofu, and hemp seeds, just to name a few delicious protein rich options.
Sometimes, I make a cilantro hemp seed pesto. Other times, I use miso, umeboshi paste or chèvre as the paste to seal the nori rice rolls.
Yesterday for my dear friend’s 75th birthday, I made and brought this platter of nori rice rolls aka vegan sushi.
My friend Jai, a talented painter and the hostess insisted on taking photos.
