What makes this delicious Mediterranean Rice Salad so good is the dressing made with the flavored olive oil from the marinated dried tomatoes.
Today, I added fresh rosemary, garlic scapes, marjoram, thyme leaves and thyme flowers to my marinade. I had used some of the marinated dried tomatoes in my Tempeh with Marinated Dried Tomatoes and Kale dish for my personal chef clients as well as for myself for delicious quick meal with pasta for myself.
Once you take the time to make marinated dried tomatoes, flavored oils and vinegars, they will enliven your menus and meals all year round.
And as you use and eat the marinated dried tomatoes, you can add to the marinade fresh and dried herbs, plus more dried tomatoes.
