Fresh picked organic farm to table vegan and gluten free stir fry veggie tortillas make a quick and easy dinner. And it makes an excellent brunch and lunch, too.

And you can change the veggies and herbs in this dish all year round. You can also swap ingredients according to your mood, dietary preferences, colors, and textures. 

For example, other tasty choices to consider are corn, onions, scallions, bell peppers, broccoli, carrots, cilantro, thai basil, chives, to name a few.

Plus, grated cheese can sub for the edible flowers, too.

Last, but not least, this stir fry includes tofu, tomatoes, collards, summer squash, basil and shiitake mushrooms. Seasoned with turmeric and black pepper, it is also deliciously anti-inflammatory. Adding nutritional yeast adds B Vitamins and protein, and a cheesy flavor. 

Colorful, delicate, edible flowers such as nasturtiums and borage flowers make a festive presentation.

And since we eat with our eyes, colorful garnishes like the edible flowers, add to the fun and yum of eating healthy food.
