Leslie, Kemper and organic eggs Buying my pasture raised organic eggs from neighbors is a passion of mine. That bright orange yolk; getting the most nutritious and delicious local foods is a win-win:

“According to a 2007 egg-testing project, Mother Earth News compared the official U.S. Department of Agriculture (USDA) nutrient data for commercial eggs with eggs from hens raised on pasture and found that the organic pasture raised eggs had:

  • 1/3 less cholesterol
  • 1/4 less saturated fat
  • 2/3 more vitamin A
  • 2 times more omega-3 fatty acids, the chickens get to eat clover, alfafa, purslane and other wild greens in the grass
  • 3 times more vitamin E
  • 7 times more beta carotene

The dramatically superior nutrient levels are most likely the result of the differences in diet between free ranging, pastured hens and commercially farmed hens.”

Free range roosters and chickens

The above was from a blog I wrote in Nov 12, 2014

And in May 2025, I found this information on the labels you find on egg boxes labels from Dr Chris Boettcher:

I hope you find it useful.

1)➡️ Cage-Free: This is the bare minimum.

Hens aren’t kept in cage, but packed into giant warehouses with no guaranteed outdoor access.

Conditions are cramped, stressful, and lit artificially. Their diet is mostly corn and soy.

➡️ Free-Range: A slight step up.

Hens must have some outdoor access -usually a small, fenced-in area.

Living conditions are still largely industrial and crowded.

➡️ Pasture-Raised (Gold Standard)

This is what you want. Hens live outdoors with space to roam—typically 108 square feet per bird.

They eat bugs, worms, and forage in the sun (just like nature intended).

2) Why It Matters

Studies show pasture-raised eggs have:

• 2x more omega-3s

• 3–6x more vitamin D

• Higher levels of vitamin A, E, and antioxidants

Tip: Look for Certified Humane or Vital Farms labels for extra quality assurance.

3) Nature’s Multivitamin

Beyond labels, eggs themselves are nutritional powerhouses:

• Complete protein

• Healthy fats

• Vitamins A, D, E, K, B2, B12

• Minerals: selenium, zinc, calcium, iron

• Antioxidants: lutein & zeaxanthin

They’re highly bioavailable—your body absorbs them efficiently.

4) Help with Weight Management

Eggs are a perfect combo of protein and fat, which helps:

• Keep you full longer

• Reduce cravings

• Support muscle-building and metabolism

5) Good for Your Heart (Yes, Really)

Forget the old myths. Eggs actually support heart health—thanks to their balance of healthy fats.

The real culprits behind heart disease?

Processed oils, refined sugar, insulin resistance, & chronic inflammation. Not cholesterol from whole eggs.

6) Fuel for the Brain

Eggs are rich in choline, a crucial nutrient for:

• Brain development

• Memory

• Nervous system health

Most people don’t get enough. Eggs are one of the best natural sources.

7) Protect Your Vision

Egg yolks contain lutein and zeaxanthin, two antioxidants that protect against:

• Macular degeneration

• Vision loss

• Eye strain

Eggs are eye protection for your cells—straight from your breakfast.

8) Stronger Bones and Teeth

Thanks to high vitamin D content, eggs help your body absorb calcium and keep your bones strong.

Pair them with a walk in the sun and you’ve got one of the best combos for bone health.

9) Clearer Skin

Eggs support skin health by providing:

• Zinc

• Vitamin A

• Vitamin E

These nutrients reduce inflammation and promote skin clarity from the inside out.

Thanks to Dr Chris Boettcher for the above info on eggs, May 2025.
