I have been teaching & making these delicious gluten free cookies since 1990 and I’ve changed the recipe a little bit.

You’ll also find another version in my popular cookbook Going Wild in the Kitchen that came out in 2005 before I discovered coconut oil for pastry making.
Now every time I teach this recipe I let people know of all the delicious variations you can make including changing the size of the cookie to jumbo as you can see in this picture.
However, all through the years, I still sweeten the cookie with maple syrup.
