Peanut Butter Chocolate Chip CookiesBob, founder of Bobs Red Mill, is making news these days for making his fabulous natural foods company worker – owned.

You can find my original recipe (1990 that I developed for the Teff Company) for Teff Peanut Butter Cookies on Bobs Red Mill Teff flour package, bobsredmill.com, and it’s also on the Teff Company website teffco,com

I have been teaching & making these delicious gluten free cookies since 1990 and I’ve changed the recipe a little bit.

The photo above by Tracey Eller is of the delicious Peanut Butter Chocolate Chip Cookie recipe, I developed for Nutiva with organic virgin coconut oil and organic fair trade chocolate chips.

You’ll also find another version in my popular cookbook Going Wild in the Kitchen that came out in 2005 before I discovered coconut oil for pastry making.

Now every time I teach this recipe I let people know of all the delicious variations you can make including changing the size of the cookie to jumbo as you can see in this picture.

However, all through the years, I still sweeten the cookie with maple syrup.
