Pumpkin/Sweet Potato Pie Pecan Pie

MMMMM Sweet Potato Pie! You can be creative making pies. Make different pie crusts and mix and match the filling. I like to bake sweet potato pie with a pecan cookie crust. And you can use sweet potatoes, yams, butternut squash or a combination. 

For a delicious vegan pie, I like to blend cooked sweet potatoes with chia seeds, coconut butter and water to replace eggs and milk. Season with organic spices, like the traditional combination: cinnamon, ginger, and nutmeg. Sometimes, vanilla extract, too, and for sweeteners, I like to use maple sugar and coconut sugar.

I admit, I have eaten this pie for breakfast. And I know that folks love it topped with whipped cream, non dairy frozen desserts and ice cream. Enjoy!
