You can make quick and easy Organic Vegan Vegetable Lo Mein with the vegetables of the season and organic ramen noodles.
You can stir fry the noodles with broccoli and cauliflower.
Other times, I use carrots, scallions, and celery.
For seasonings, I like to fry ginger and sometimes also garlic with either sesame oil or extra virgin coconut oil. Mirin, sweet rice cooking wine and tamari add an Asian accent.
Serve as a vegan, gluten-free side dish or sprinkle hemp seeds for a complete protein and call it a main dish.
