You can make quick and easy Organic Vegetable Lo Mein with the vegetables of the season and a wealth of organic ramen noodles. Here I used broccoli and cauliflower. Other times, I use carrots, scallions, and celery. For seasonings, I like to fry ginger and sometimes also garlic with either sesame oil or extra virgin coconut oil. Mirin, sweet rice cooking wine and tamari add an Asian accent. Serve as a vegan, gluten-free side dish or sprinkle hemp seeds for a complete protein and call it a main dish.
